Farmhouse Omelette

This dish also makes a hearty weekend brunch for two. Submitted by Aller Spanninga (aller) from New Zealand.

4 rashers bacon, streaky
200g potato (1 large or 2 medium)
200g onion
1 tbsp butter
4 eggs
2 tbsp grated cheese, Gouda, Edam or Colby
salt, pepper, Tabasco to taste

1) Cut across bacon rashers to make 1cm wide pieces. Peel and finely dice the raw potato. Peel and finely chop the onion.
2) Melt butter in large (non-stick) frying pan and add bacon. Stir-fry for 3 minutes, then add potato and onion.
