Perfect roast potatoes

750g maris piper potatoes, peeled and cut into large chunks
Sunflower oil
15g butter
2 tsp salt
3 cloves garlic, lightly crushed (skin kept on)
2 large sprigs of rosemary, needles only, roughly chopped

1) Pre-heat oven to 220°C and place the oild and butter in a roasting tin to heat. The oil should be about 0.5cm deep
2) Meanwhile, boil potoatoes in plenty of water with the salt until starting to break up on the edges - about 12 mins
